The Inside Scoop
This was a pretty straightforward “eat and tell” piece — and the double sided, flippable sushi featured in the article is something to behold.
But the funny thing is, despite its impressive historical pedigree, there’s significant doubt as to whether kakushizushi ever really existed during the period attributed to its origin.
Though that’s not to say it didn’t, either.
Apparently a local lord did pass an edict stating, “There shall only be one dish on the dining table.” And I’ve no doubt folks cooked up some clever culinary adaptations to skirt around the Daimyo’s miserly rule. In my opinion, and I’m kinda shooting from the hip here, the exact details of some form of delectable defiance got exaggerated over the centuries and eventually morphed into the “hidden sushi” famous in Okayama today.
But who knows!
In any case, it’s a great story that you can really wrap your teeth around. And there’s plenty to be said for that, purely factual or no.

Flipping that sushi box over. It really is a “Hey, presto!” moment. And way tasty.
